Background

White clover (Trifolium repens) is a herbaceous plant that comes into bloom in spring through the summer. Honeybees prefer the nectar of white clover flowers to others. Clover honey is produced when bees use white clover as their main source of food.

While clover itself is native to Europe and Central Asia, it can also be commonly spotted in New Zealand where it is grown organically in grassy areas. Clover is also preferred by organic farmers and prized as a pasture plant that nitrogenizes the soil and naturally fertilizes it.
